Bolivia Coffee Beans

Bolivia is one of the most compelling and least accessible origins in South America. Coffee is grown almost exclusively in the high-altitude valleys of the Yungas region, northeast of La Paz, with Caranavi the most significant area for specialty production. Elevations commonly reach 1,500 to 2,000 metres, among the highest in the coffee-growing world, and the combination of altitude, Andean volcanic soils, and significant day-to-night temperature variation creates conditions for coffees with real clarity, structured acidity, and a distinctive sweetness. The country's relatively small output, difficult terrain, and limited export infrastructure mean well-sourced Bolivian lots are genuinely hard to find in the UK market.

What Bolivia produces at its best is closer in register to the cleaner, brighter end of the Latin American spectrum than to the fuller, chocolate-driven profile of Brazil or the lower-grown Central Americans. Washed processing is common and tends to highlight the terroir clearly: stone fruit, citrus, and tea-like delicacy are characteristic. Honey and experimental processing methods are increasingly appearing from farms with the infrastructure to manage them carefully, adding fruit and body without losing the precision the altitude provides. Caturra and Catuai are the most widely grown varietals.

Browse: Latin American coffees · Caturra · All single origins

Bolivia: Jeivert Panuni, Honey

Raspberry, blackberry and redcurrant layer up in the cup like a summer berry medley, bright and juicy from the first sip, before shifting to a sweet cooked apple finish.

The remote region of Irupana sits in the South Yungas province towards the most westerly edge of Bolivia, nestled among the Andes at the edge of the country. It's to the south of Caranavi, the largest coffee-growing region in Bolivia, and shares a similar verdant – albeit slightly drier – high-altitude terrain that makes it excellent for growing coffee. Farms here are small (around 5 hectares on average) and the area has a strong, proud tradition of coffee farming. It's also a place with deep historical roots: Irupana was home to Pedro Domingo Murillo, a late 18th-century revolutionary who led the 1809 uprising against Spanish rule in La Paz, before being defeated by royalist forces at the Battle of Irupana and executed in 1810. He's remembered today as one of Bolivia's great independence martyrs.

We've only sourced coffee from Irupana a handful of times previously. Coffee from more remote parts of Bolivia is often made up of contributions from multiple smallholders, which means we can't always trace it back to individual farms. Thanks to improved traceability and deeper collaboration with the Sol de la Mañana programme, we're now seeing more single-producer lots like this one from Jeivert – and Roland was particularly excited about that development for the 2025 harvest.

Jeivert is a second-generation producer whose farm, La Avanzada – "The Advance" – is named in the spirit of Murillo's forward-looking defiance. He began his journey through the Irupana Cooperativo, which is where we first encountered his coffee back in 2016. By 2017, he'd gained enough experience to strike out on his own, setting up his own micro-mill to process his coffee independently. It proved a prescient move: the co-operative closed in 2019 as the number of local producers declined, many switching to coca leaf production. His wet mill is modest by commercial standards – purpose-built, with a brick drying room housing raised beds that protect the coffee from the elements while maintaining good airflow – but it's been transformative for the area. Jeivert's partner in the operation is his friend Grover Machaca, who has a 2-hectare farm nearby and brings his cherry to La Avanzada for processing. Caranavi means "high place" in the Aymara language, one of the indigenous languages spoken in Bolivia. Caranavi province is in a transitional zone between the high Andes and the Amazon basin, it’s known for its lush vegetation and has been dubbed the "Coffee Capital of Bolivia" for its ideal growing conditions and over 13,000 hectares of plantations.

Finca El Arcangel is located at 1,500 metres above sea level, near the town of Copacabana. The farm was first established in 2015 and produced its first coffee harvest in 2017. This 10-hectare farm is managed with precision and care by the Rodriguez family, who are known for their commitment to quality and sustainability. The farm’s rich biodiversity and volcanic soil create ideal conditions for slow cherry maturation and complex flavour development – essential for delicious Bolivian coffee.

The Buena Vista Project

The farm is part of Agricafe’s Buena Vista program, their ambitious project to revive Bolivia’s declining coffee trade. Pedro Rodríguez, along with his daughter Daniela and son Pedro Pablo are the driving force behind Agricafe and Fincas Los Rodríguez. Theirs is a story of innovation and a deep commitment to revitalising the Bolivian specialty coffee industry that was, not so long ago, on the verge of disappearing entirely.

The Rodriguez family have been sourcing coffee from small coffee producers in the Caranavi and Samaipata regions for three decades, but the steady decline of coffee production put the sustainability of their export business in jeopardy. Daniela and Pedro bought land in the Caranavi region to showcase modern practices and educate other producers in sustainable coffee farming, as well as increasing the overall volume at their mills. They have twelve farms in total, and Finca El Arcangel is one of eight in the Caranavi region.

Rather than following traditional Bolivian Coffee farming practices common in the region, they took an extremely methodical, innovative and scientific approach. They consulted leading specialty coffee agronomists from around the world, trialled different varieties and techniques, and carefully documented everything they learned. The results were extraordinary. Their farms became some of the most organised and beautiful in the country - coffee planted in neat rows, meticulously separated by variety, vibrant and healthy and producing exceptional quality and yields. The family also made a commitment to conservation from the outset, aiming to keep 60% of their land as nature reserves with coffee planted as agroforest amongst the trees.

Precision and Perseverance

The farm distinguishes itself from others in the area by separating its red and yellow Caturra varieties. Both varietals have adapted well to the local environment and climate, but the team at El Arcangel accentuate their unique characteristics by ensuring they're grown, picked, and processed individually. The lot that we have here is just the Yellow Caturra coffee, grown separately on 4 hectares of the farm and processed with strict varietal separation to preserve micro-lot integrity.

El Arcangel employs esqueleto pruning (meaning “skeleton” in English), a regenerative technique that cuts trees back to their structural skeleton to promote vigorous regrowth. The trees are pruned to a height of 1.6 to 1.8 meters, and the lateral branches are reduced to 10 to 15 centimetres. This takes the trees right down to their bare bones, hence the name. Though it requires 12 to 18 months for the trees to recover, coffee cherry production on the new-growth branches can double. This method enhances airflow, reduces disease risk, and improves long-term yield. By rotating pruning cycles across the farm, they ensure consistent output while maintaining plant health and cup quality.

Traceability

Country: Bolivia

Region: Yungas

Municipality: Caranavi

Nearest town: Copacabana

Farm: El Arcangel

Producer: Los Rodriguez

Mill: Agricafe Buena Vista

Elevation: 1,500 m.a.s.l.

Variety: Yellow Caturra

Processing method: Washed

Roast Information

Medium‑dark
Roasted with a calm, steady progression, this coffee is carried cleanly through first crack and developed just far enough to reach the very first pops of second before finishing the roast. There was no school in their town, the roughly 100km relocation was worth it to give Gregorio a good start in life.

Gregorio is now a full-time coffee producer, living on his 12-hectare farm with his wife Daisy and his two youngest children. In his free time, Gregorio enjoys going on walks around town with his kids, swimming in the river, and playing football. He has owned his coffee farm for 35 years now and the little ones love to help their dad out when they can. His brother Julio also runs his own coffee farm nearby. As does his daughter Nancy (one of his two grown-up children from his first marriage) who has graduated from playing on the farm to running her own, and whose coffee we’ve also got here. Clearly the move to Caranavi was a felicitous decision for Abuela y Abuelo Palli!

The Best Bolivian Coffee

The Caranavi province sits towards the western edge of Bolivia, on the eastern slopes of the Andes mountain range. Caranavi is the hub for amazing Bolivian specialty coffee. Caranavi town (the capital of the province) itself is too low altitude to grow coffee so the farms are all situated in the surrounding hills. The Palli family’s farms are dotted around the Copacabana colonia (the Bolivian term for small agricultural villages), as are some other Ozone favourites such as Vincent Palli and Martin Chirino. It’s safe to say the region produces some truly delicious coffees.

Tigers and Gold

Gregorio’s farm covers 12 hectares in total but only 2 hectares are currently used to grow coffee. It is named Volcán del Tigré, which translates to “Tiger’s Volcano” in English, although “tigré” is used locally to mean jaguars. Prior to becoming the well-tended specialty coffee farm it is today, the land used to be very overgrown with wild vegetation. Local people used to say that they saw smoke rising from one of the hills in the jungle, they thought it must be a volcano. Legend has it that when smoke comes from the hills, there's gold to be found there! Around the same time, nearby residents also noticed what appeared to be a footpath running through the land – this turned out to be a tiger's path, worn into the landscape by prowling big cats. To this day, Gregorio doesn't keep animals on the farm as they might become el tigrés next meal. He is looking to expand his coffee-growing area over more of the ten other hectares on his farm and is really excited about what the future at Volcán del Tigre holds.

Nancy’s farm is a little smaller than her father’s, situated just across the valley on the opposite hillside. As is more common for Bolivian coffee farmers, her land doesn’t have a set name. That tends to only be the case with larger or more established farms, such as Gregorio’s, and Nancy has not been in the business as long as her dad. She hasn’t quite got to the naming level yet, but with coffee this good we’re sure it’s in her future. She lives on the farm with her family, where Roland had the great pleasure of meeting everyone on his last trip in 2025.

Tomorrow Looks Bright

Both farms are part of the Sol de la Mañana project, run by our Bolivian exporting partners Agricafe. Gregorio says he's already learned a great deal about sowing coffee and fighting coffee pests. He's had issues in the past with leaf rust, borer beetle, and mycena citricolor, but thanks to the program he's been able to get them all under control. When growing coffee on such a small plot of land, even a small portion of the coffee harvest being lost to pests can be devastating to a producer, so ensuring harvests remain unspoiled is vital to maintaining a stable income. Nancy is just starting out with her specialty coffee farming journey, so the guidance is incredibly useful.

The program provides training in coffee agronomy to small producers. Meaning “The Sun of Tomorrow”, this program supports small local producers to increase their long-term efficiency and quality of production so that they can become sustainable. The Los Rodriguez farms play into this, with the varietals, techniques, and processing which they develop on the farms being passed on to the Sol De La Mañana producers. The producers get support in understanding not just coffee agronomy but cupping, the coffee markets, and much more. The coffee from these producers is delivered to Agricafe’s mill, Buena Vista, in the evening and processed there. Each lot is rigorously separated, measured and controlled to ensure the very best quality coffee.

Juicy Processing For Juicy Tasting Notes

The coffee for this lot came from a mix of Caturra and Catuai from both Nancy and Gregorio’s farms and was taken to the nearby Buena Vista mill to be processed with the Mosto Fermented Washed technique. Mosto is a Spanish word which describes fresh fruit juices - specifically before they are fermented. The same root gives the English word for this, used in wine-making - a Must.

Starting with two batches of coffee, the first is processed using the regular Washed technique (depulped, fermented in a closed tank, rinsed, and taken to dry) and the liquids from that first fermentation are saved. With the pH and microbial levels closely monitored and managed, the next batch of coffee cherries then goes through its own processing – with the fermentation step carried out with the coffee beans submerged in this mosto juice. Once the fermentation has broken down any remaining pulp, this is also rinsed and dried. Utilising these fresh, already fermenting juices for the second coffee gives the process a kick start which seems to help develop the complex, juicy flavours in these coffees.

To dive into Mosto coffee processing in more detail, check out our blog article here: https://ozonecoffee.mom/blogs/coffee-processing-explained/what-is-mosto-processing

Traceability

Country: Bolivia

Department: La Paz

Province: Caranavi

Colonia: Copacabana

Producer: Gregorio & Nancy Palli

Elevation: 1,400 - 1,650 m.a.s.l

Variety: Caturra & Catuai

Processing method: Mosto Fermented Washed

GPS: 15°48'56.8"S 67°31'40.9"W

Cupping Scores

Cupping notes: Lime, blackcurrant, cocoa.

Cup of Excellence Cupping Scores

Clean Cup: 6/8

Sweetness: 6/8

Acidity: 6/8

Mouthfeel: 6/8

Flavour: 6.5/8

Aftertaste: 6.5/8

Balance: 6.5/8

Overall: 6.5/8

Correction: +36

Total: 87/100

If you'd like to find out more about how we score coffees, make sure to read our blog post “What Do Coffee Cupping Scores Actually Mean?” and if you'd like to try cupping yourself, we've got a guide to that too! In addition to coffee, the farm is committed to environmental stewardship, with active reforestation efforts planting native species such as Tajibos, Mara, and Ceibo to preserve biodiversity and support long-term soil health.

Finca Don Carlos is named in honour of Carlos Mariaca, the oldest and most unconditionally awesome employee of Agricafe. He was there at the start of the specialty coffee trend and, together with Pedro Rodriguez (the founder of Agricafe) helped to build the wet mill in Caranavi. As a tribute to his legacy within Bolivian specialty coffee and to show their gratitude for all his good work, the company decided to give him partnership of the farm. His name has since been synonymous with delicious Bolivian coffee.

The Buena Vista Project

The Rodriguez family have been sourcing coffee from small coffee producers in the Caranavi and Samaipata regions for three decades, but the steady decline of coffee production put the sustainability of their export business in jeopardy. Daniela and Pedro bought land in the Caranavi region to showcase modern practices and educate other producers in sustainable farming, as well as increasing the overall volume at their mills. They have twelve farms in total, and Finca Don Caros is one of eight in the Caranavi region, the project's second farm overall. Pedro Pablo studied agronomy in Honduras and brought techniques he had learnt there to the Buena Vista farms.

What Is Mosto Washed Processing?

The meticulous processing carried out at the Buena Vista mill manages the fermentation, depulping and drying processes to ensure exceptional quality - aided by their onsite laboratory where the coffee is analysed daily and its progress tracked. Through their exacting systems and traceability, alongside a world-class cupping team, they've been able to refine their techniques whilst continuing to learn for the future.

Municipality: Caranavi

Colonia: Bolinda

Producer: Agricafe

Farm: Don Carlos

Producer: Carlos Mariaca

Elevation: 1,550 – 1,650 m.a.s.l.

Size: 18.7 hectares

Processing method: Mosto Washed

Varietal: Caturra & Catuai

Harvest time: May - November

Reforestation: Tajibos, Mara, Ceibo

Roast Information

Medium Dark
Through the gap and let this develop a little in the gap before pushing through to the edge of second as the roast finishes.

Cupping Scores

Cupping Notes: Sultana, apricot, golden sugar.

Cup of Excellence Cupping Scores

Clean Cup: 6.5/8

Sweetness: 6.5/8

Acidity: 6/8

Mouthfeel: 6/8

Flavour: 6/8

Aftertaste: 6.5/8

Balance: 6.5/8

Overall: 6/8

Correction: +36

Total: 86/100

If you'd like to find out more about how we score coffees, make sure to read our blog post “What Do Coffee Cupping Scores Actually Mean?” and if you'd like to try cupping yourself, we've got a guide to that too!

Variety: Caturra & Catuai

Processing method: Dry Fermented Washed

Roast Information

Medium‑dark
Roasted with a calm, steady progression, this coffee is carried cleanly through first crack and developed just far enough to reach the very first pops of second before finishing the roast. He and his family love good wine and have drawn on this when developing the design for this land. The word “Trapiche” originally refers to a type of mill made of wooden rollers used to extract juice from fruit such as grapes or olives. The coffee we have from Trapiche this season is a Mosto Washed Bourbon.

A Lesson in Good Coffee

All of the Bolivian coffees that we have at Ozone come to us via the Rodriguez family at Agricafe. The coffee that they export to us originates either from smallholder farms participating in their sustainability program, Sol de la Mañana, or from their own Fincas Los Rodriguez farms. The Trapiche farm is located in the Samaipata region of Bolivia. Pedro Rodriguez and his family also own a handful of other farms in the area: Floripondio, El Fuerte and Samaichacha and a whole host of other farms further afield in Bolivia, such as La Linda and Alasitas, that a lot of you will also be familiar with.

Daniela and Pedro bought land here to showcase modern practices and educate other producers in sustainable coffee farming, as well as increasing the overall volume at their mills. The Fincas Los Rodriguez farms are used to teach other local producers as a good example of modern agronomy, pruning techniques, layout etc. It's essentially a place to say "Hey, come look at what we're doing" and show off all of the modern work that gets you better production and more efficient systems.

The Rodriguez family are continuously looking for inspiration from other coffee-producing countries and from other industries such as winemaking - Trapiche is an example of this winery inspiration in action. The farm is a truly amazing place and the team have designed it to look and function like a vineyard, using those methodologies to refine their coffee production process. This is particularly fitting as Samaipata is an up-and-coming wine region within Bolivia, with several small vineyards located only a short distance from Trapiche.

Samaipata

The farm has been operational since 2016 so it's still relatively young (coffee trees take around 4 years to mature enough to begin producing cherries) but the results from the first few harvests are very exciting. Samaipata isn't a traditional coffee-growing region but it's one that the Rodriguez family have pioneered. The climate of the Samaipata region is temperate, semi-dry in the winter months, and mild with an average annual temperature of 19.9°C. During the winter months, cold fronts called Surazos come from the Argentine Pampas and enter the plains and valleys of Santa Cruz, these cold winds combined with the altitude can reach temperatures below freezing. In the summer the days are warm and the nights cool, this variation in diurnal temperature causes the cherries to take a longer time to ripen and their mucilage becomes very thick. The local soil contains a lot of magnesium, which is great for growing coffee and means that the coffee plants are
less susceptible to roja, or other fungi. All of these factors contribute to a very unique taste profile.

What is Mosto Washed Processing?

The meticulous processing carried out at the Rodriguez mill manages the fermentation, depulping and drying processes to ensure exceptional quality - aided by their onsite laboratory where the coffee is analysed daily and its progress tracked. Through their exacting systems and traceability, alongside a world-class cupping team, they've been able to refine their techniques whilst continuing to learn for the future.

To dive into Mosto coffee processing in more detail, check out our blog article <a This particular lot is a Honey processed mix of Catuai, Caturra, and Typica, all grown on Jeivert’s own farm La Avanzada and processed at his mill.

Off The Beaten Track

The remote, 200-hectare region of Irupana sits in the South Yungas province towards the most westerly edge of Bolivia, nestled among the Andes mountain range that straddles the edge of the country. It’s to the south of Caranavi, the largest coffee-growing region in the country, and boasts a similar verdant (albeit slightly drier), high-altitude terrain that make excellent conditions for growing coffee, reflected in the region’s strong history of coffee farming. Farms in Irupana are small (on average around 5 hectares) and around 1,800 people live locally.

We’ve only sourced coffee from the region a handful of times in previous years. It’s common for coffee from more remote areas of Bolivia to be blended lots, often made up of contributions from multiple smallholders, which means we can’t always trace the coffee back to individual farms. Thanks to improved traceability and deeper collaboration with the Sol de la Mañana program, we’re now seeing more availability of single-producer lots like this one from Jeivert. Roland was particularly excited about this new development for our 2025 harvest Bolivian coffees and said, "It’s a significant step forward - not just for transparency, but for recognising the skill and dedication of individual farmers whose work could otherwise go unnamed".

Revolutionary Coffee

Jeivert is a 2nd generation coffee producer and has 5 Hectares of coffee at his farm, La Avanzada. Meaning "The Advance". This name came about because Irupana was the home of Pedro Domingo Murillo, a 18th Century figure who is credited as an early revolutionary and patriot for the independence movement of Bolivia from Spanish rule.

As this area is a little further away from Caranavi than most of the small producers we buy from in the Yungas, it means that it’s not practical to process the coffee at the Buena Vista Mill. The other Bolivian producers we buy from are processed by Agricafe, either at Buena Vista in Caranavi or El Fuerte in Samaipata). Irupana is too far to deliver fresh cherry to Buena Vista mill (about 4 hours’ drive each way), the small producers in this area typically sell their coffee as cherry in the town to traders.

Going It Alone

Enthusiastic and a self-confessed coffee lover, Jeivert Pañuni is a second-generation coffee producer and was previously part of the Irupana Cooperativo. This large coffee co-operative bought and processed nearly all the coffee in Irupana in 2016 (how we first came to buy his coffee way back when!) and is where he started out in coffee and began developing his skills as a producer. In 2017, Jeivert had been learning a lot at the Cooperative but was convinced there was a better way to get the best results (and value) from the great coffees produced in the region, so he set up his own micro-mill to process his coffee.

This quickly showed itself to be a good choice, with the Irupana Cooperativo closing in 2019 as the number of local producers declined (many moving to Coca leaf production). His wet mill is equivalent to the family micro-mills in Costa Rica, just enough for his farm La Avanzada and a bit of cherry from his neighbours. He has constructed a purpose-built brick drying room with raised beds inside, protecting the coffee from the elements while allowing good airflow. It's modest by any commercial standard but has been transformative for the area. The first, released earlier this year, was a Dry Fermented Washed coffee, this lot makes a beautiful comparison by taking the same crop of Caturra and Catuai coffee cherries and processing them via the Mosto Washed method. Two very different approaches to Washed processing for two delicious Bolivian coffees.

Pedro’s Farm

Pedro Flores’ farm is in the small colonia of Villa Rosario, a short drive east of Caranavi city. The Caranavi province sits towards the western edge of Bolivia, on the eastern slopes of the Andes mountain range. Caranavi means "high place" in the Aymara language, one of the indigenous languages spoken in Bolivia. Caranavi province sits in a transitional zone between the high Andes and the Amazon basin, it’s known for its lush vegetation and has been dubbed the "Coffee Capital of Bolivia" for its ideal growing conditions and over 13,000 hectares of plantations.

Pedro has about 2 hectares of land spread across a ridge at 1,500 metres above sea level. He’s very aware of how the plants respond differently depending on the different microclimates they experience on one side from the other. He’s part of the Sol De La Mañana project, run by our Bolivian coffee exporting partners Agricafe. The program provides training in specialty coffee agronomy to small producers. Through this, he’s learnt to replant his land and manage his coffee plants more methodically to get both quality and consistency.

Looking To Tomorrow

Meaning “The Sun of Tomorrow”, this program supports small local coffee producers to increase their long term efficiency and quality of production so that they can better grow sustainable coffee beans. The Los Rodriguez farms play into this, with the varietals, techniques, and processing which they develop on the farms being passed on to the Sol De La Mañana producers. The producers get support in understanding not just coffee agronomy but cupping, the coffee markets, and much more. The coffee from these producers is delivered to Agricafe’s mill - Buena Vista - in the evening and processed there. Each lot is rigorously separated, measured and controlled to ensure the best quality for the coffee. In Bolivia, even a small portion of the coffee harvest earning less than a good speciality coffee price would be devastating to the producers.

To ensure only the very ripest coffee cherries are picked, it's not uncommon for producers in the Sol De La Mañana program to do 7 or 8 harvesting passes across their plants, many more than producers in other parts of the world do. This is very labour intensive and yields smaller amounts each pass but ensures great quality coffee. The downside is that for each delivery of cherries from the Sol De La Mañana producers in Bolinda, the lots are often too tiny to process separately and so it’s common for coffee from these smallholders to end up as blended lots which means we can’t always trace the coffee back to individual farms. Thanks to improved traceability and deeper collaboration with the Sol de la Mañana program, we’re now seeing more availability of single origin coffees like this one from Pedro. Roland was particularly excited about this new development for our 2025 harvest Bolivian coffees and said, "It’s a significant step forward - not just for transparency, but for recognising the skill and dedication of individual farmers whose work could otherwise go unnamed".

Juicy Juicy Mosto

The meticulous processing carried out at the Buena Vista mill manages the fermentation, depulping and drying processes to ensure exceptionally high quality coffee - aided by their onsite laboratory where the coffee is analysed daily and its progress tracked. Through their exacting systems and traceability, alongside a world-class cupping team, they've been able to refine their techniques whilst continuing to learn for the future. Mosto is a Spanish word which describes fresh fruit juices - specifically before they are fermented. The same root gives the English word for this, used in wine-making - a Must.

Once the fresh cherry is delivered to Buena Vista mill, it goes through a de-pulper to remove the skin and fruit pulp from the seeds.

Starting with two batches of coffee, the first is processed using the regular Washed technique (depulped, fermented in a closed tank, rinsed, and taken to dry) and the liquids from that first fermentation are saved. With the pH and microbial levels closely monitored and managed, the next batch of coffee cherries then goes through its own processing – with the fermentation step carried out with the fresh coffee beans submerged in this mosto juice. Once the fermentation has broken down any remaining pulp, this is also rinsed and dried. Utilising these fresh, already fermenting juices for the second coffee gives the process a kick start which seems to help develop the complex, juicy flavours in these coffees. After fermentation is complete, the coffee is thoroughly washed to remove all remaining mucilage, then taken to raised drying beds where it slowly dries to the optimal moisture content.

To dive into Mosto coffee processing in more detail, check out our blog article here: https://ozonecoffee.mom/blogs/coffee-processing-explained/what-is-mosto-processing

Traceability

Country: Bolivia

Department: La Paz

Region: Caranavi

Town: Copacabana

Colonia: Villa Rosario

Producer: Pedro Flores

Farm size: 2 hectares

Elevation: 1,500 m.a.s.l

Variety: Caturra & Catuai

Processing method: Mosto Washed

Cupping Scores

Cupping Notes: White grape, white sugar, lime.

Cup of Excellence Cupping Scores

Clean Cup: 6.5/8

Sweetness: 6.5/8

Acidity: 6.5/8

Mouthfeel: 6/8

Flavour: 6.5/8

Aftertaste: 6/8

Balance: 6.5/8

Overall: 6.5/8

Correction: +36

Total: 87/100

If you'd like to find out more about how we score coffees, make sure to read our blog post “What Do Coffee Cupping Scores Actually Mean?” and if you'd like to try cupping yourself, we've got a guide to that too! What is Coffee Cupping.

Roasting Information

Medium dark - We think that this coffee is definitely dreamy, so the results match the aspiration! This is the only Bolivian coffee we’ve sourced from Finca La Linda this harvest, a small-batch exceptional quality Coco Natural process Caturra.

The Necessary Shift

La Linda is one of the Fincas Los Rodriguez, run since 2012 by our friends at Agricafe in Bolivia. At a time when many smallholder farmers were abandoning Bolivian coffee altogether, the Rodriguez family made the bold decision to begin farming for themselves. By the early 2010s Bolivian coffee production had gone into freefall - annual exports dropped from roughly 70,000 bags in 2010 to just 22,000 bags by 2019. Facing a nearly overwhelming combination of challenging terrain, lack of infrastructure investment, political instability, and climate change, Pedro, Daniela and Pedro Pablo felt that if coffee production was going to survive in Bolivia, they would need to start farming themselves.

A Shining Example

The family acquired land near their Buena Vista mill in Caranavi to establish Finca La Linda. Rather than following traditional farming practices common in the region, they took an extremely methodical, innovative and scientific approach. They consulted leading specialty coffee agronomists from around the world, trialled different varieties and techniques, and carefully documented everything they learned. They also brought in Iván Hugas, an oenologist from the Argentinian wine industry, to guide their approach to fermentation at the wet mill. The exceptionally well controlled processing at Buena Vista is a core component of the high-quality coffee Agricafe are now known for.

La Linda holds a special place in Agricafe’s hearts, as what they learned here helped develop and shape the plans for all their future farms and became the basis of the guidance offered through the Sol De La Mañana program. While the lush eastern region of Los Yungas is traditionally where Bolivian coffee production is concentrated, La Linda and 7 other Rodriguez farms are located in Caranavi, famous for its fertile soils and high altitude. Now growing Caturra, Catuai, SL28, Java, and Bourbon between two mountains coated in dense forest, it is both a peaceful haven and one of Pedro and Daniella’s biggest success stories. The family also made a commitment to growing eco-friendly coffee and championing conservation from the outset, aiming to keep 60% of their land as nature reserves with coffee trees planted as agroforest amongst the native woodland.

Classic Caturra

The coffee we’ve got here is a small lot of Caturra. This is a classic Bolivian coffee varietal for farms here generally, but not one that the Rodriguez family actually grow a lot of volume of themselves. Over time, the focus on their own farms has moved more towards the planting of new coffee varietals. East in the Samaipata region, another farm, Floripondio, hosts the family's varietal nursery - here they've planted over 50 different varieties to determine which ones return the best results in the Bolivian terroir. Caturra is expected to keep a place alongside the more unusual varietals though. It is tried and tested in the Bolivian environment and proven itself as reliable for producing both good yields and a really nice, balanced cup profile.

Processing That’s Worth The Effort

This lot is particularly small in size because processing coffee in the Natural style isn’t common in Bolivia as it presents a number of challenges with the local climate. The Rodriguez family saw the value that Natural processed coffees could bring in terms of diversifying the range of flavours you get (and they know that we customers are very keen!) so they decided to invest both money and effort into creating a way of doing this process which would work in Bolivia. Suitable coffee is chosen by mill manager Adrian Silva when it arrives at the wet mill - he will only attempt Natural processing on certain varietals at the perfect ripeness (measured with both colour and sugar levels) so meticulous control is necessary from the very beginning. The local weather forecasts must also be in alignment for Natural coffees to be successful, needing a guaranteed period without rain when the selected cherries can be reliably laid out on raised beds in the sun.

The freshly picked coffee cherries undergo a short outdoor pre-drying stage, rapidly reducing moisture to prevent defects while preserving the complex carbohydrates in the fruit - the building blocks of flavour. Then the coffee moves to the Coco dryers: static wooden boxes with metal grilles at the base, allowing precise control of airflow and temperature. Every lot is tracked for temperature, pH and microbial activity throughout. These especially stringent conditions, needed to ensure success with naturals, mean that the batches must be small by design, so we’ve only got a very limited amount of this amazing coffee.

Traceability

Country: Bolivia

Department: La Paz

Region: Caranavi

Farm: La Linda

Farm size: 10.53 hectares

Coffee production area: 3.92 hectares

Producer: Agricafe

Altitude: 1,400 - 1,450 m.a.s.l.

Processing Method: Coco Natural

Varietal: Caturra

GPS: 15°47'50.0"S 67°32'39.7"W

Cupping Scores

Cupping Notes: Lemon &
